Guys, I don't know about you, but sometimes I can get a little intimidated by the idea of What To Cook For Dinner.

For a long time, it was just me. I was nukin' up stuff and making do for ages. I probably spent more time finding room in my tiny freezer by using my Sick Tetris Skills than I did actually, you know, cooking anything.

I know, you're SHOCKED to hear that.  Shocked.

I used to be more culinarily adventurous.  But I got lazy, I guess.  Or did I? I mean, I was just doing what I needed to do to make things work, right?  But no, apparently having a bowl of cereal for dinner as an adult isn't "nutritionally sound" or "mature" or whatever its called these days.

So, I looked to maybe find something to help me...ease back into it, if you will.  Something to help me get my Groove Back, as it were.  I was at the local Food Library, aka Wood's, and I saw a little guy here I decided to take home with me.

It's about five bucks, and while they don't have a real butcher butcher anymore, they do still have a meat department.  And they take care of stuff like this!  So if you want to try it, just go to the back around there.

The Ultimate Solo Chicken Dinner

Now keep in mind, this isn't like a Chicken Kiev or a Cordon Bleu, because, you know, it's not already fried or whatnot.   And it's probably too big of a piece to give to a kid, for example.  But over all, it's a pretty good dinner portion for one person.  And it was a great opportunity for me to use my grill pan and have a little reminisce about grilling weather.

When I tell you this is perfect, I mean the cheese melts just right. I mean the bacon gets crispy on the outside. I mean the green flecks make it fancy.

FANCY. GREEN. FLECKS.

It's just the right balance of a crispyish outside and a juicy inside. Admittedly I probably overcooked it, and it wasn't dry at all!

Of course, you have to, put sides or whatever with it, and all that jazz. But the chicken has done the hard work.  Now, it's up to you!
